PANZANELLA SALAD

Ingredients

2 Tbsp. Fresh Harvest Garlic Olive Oil
½ loaf French bread, cubed into 1" pieces
1 tsp. Sunset Seasoned Salt
30-35 grape tomatoes, halved (or 3 large tomatoes diced)
1 Tbsp. capers, drained
10 basil leaves, coarsely chopped

Vinaigrette:
1 tsp. Oh! So Garlic
1/2 tsp. Dijon mustard
2 Tbsp. white wine vinegar
1/3 cup Fresh Harvest Garlic Olive Oil
1 tsp. Sunset Seasoned Pepper (Retired)
1 tsp. Sunset Seasoned Salt

Instructions

Heat oil in a large pan. Add bread and sprinkle generously with salt, cook on low and toss until bread in golden. Whisk Vinaigrette ingredients together and let sit for 20 minutes.

To assemble salad: Place tomatoes, croutons, capers and basil in a large bowl; toss with vinaigrette.
